Introduction to the Scallion Potato Salad Recipe:

As a matter of fact, we have talked much about potatoes. Potato recipes just cannot be cooked out. They can be stir fried, made into cold dishes and even made into soups. Some of them are already presented on this website. For others, I will serve them gradually from now on.

Today, I am going to introduce another recipe for potato salad. It is a easy salad that is made with few ingredients.

Ingredients:

Potatoes: 150 g

Think Scallion: 20 g

Seasonings:

Sichuan peppers: 20 grains

Salt: 5 g

MSG: 2 g

White sugar: 3 g

Vinegar: 5 g

Peanut oil: 10 g (can be replaced by vegetable oil)

Preparation for Potato Salad with Scallion:

1. Pour certain amount of water into the wok and put the wok on the stove, turn on the high heat;

2. Peel the potatoes and clean them with water;

3. Shred the peeled potatoes finely and immerse the potato shreds into clean water;

4. Strain the potato shreds out of the cool water and put them into the boiling water when the water in the wok is boiling;

5. Sieve the shreds out from the hot water and put them into cool water immediately after the potato shreds are estimated to be done (Less than 5 minutes would be okay. It will not be crispy any more if they stay in the hot water for too long.);

6. Chop the scallion coarsely;

7. Strain the cooled potato shreds out from the cool water and put into a plate where it should be mixed with salt;

8. Place the chopped scallion onto the potato shreds;

9. Add in the white sugar, vinegar and MSG, and fully blend them together.

10. Preheat the peanut oil in the wok;

11. Drop the Sichuan pepper grains in;

12. Fish the Sichuan pepper grains out when their flavor is fried out;

13. Pour the oil onto the mixed potato shreds while it is hot;

14. Blend fully again.

It’s now ready for serving.

Tips for Today’s scallion-seasoned one of the Potato Salad Recipes:

It facilitates cooking to immerse the shredded potatoes into cool water at the beginning. But don’t leave them into the water for too long. Otherwise, the nutrients will be lost into the water.
