Introduction to stir fried purple eggplant with garlic:

This is another eggplant recipe that my girlfriend loves. You might have recognized in the picture above that some of the eggplant blocks are torched. But she loves it still. Seeing from this, you can see how charismatic the eggplant is.

In the tips part, you will find out some tips to prevent this from happening. They might not work 100% of the time, but they will work to certain degree depending on your understanding and mastery of cooking skills.

Ingredients:

Purple eggplant: 300 g

Garlic: 2 cloves

Seasonings:

Soy sauce: 1 tablespoon

White sugar: 1/4 teaspoon

Sesame oil: 1/2 teaspoon

Preparation Work:

1. Rinse the eggplants clean with water, and remove the stems;

2. Chop the eggplants into big pieces (blocks);

3. Deep fry the blocks in a pan filled with hot oil for 1 minute; (Pour some oil – covering the eggplants – into a wok or a pan and turn the high heat on. Fry the eggplant pieces when the oil is hot.)

4. Strain the eggplant pieces out of the hot oil;

5. Peel the garlic cloves and minced them.

Cooking Steps:

1. Preheat 3 tablespoons of vegetable oil;

2. Drop the swiftly fried eggplant pieces into the wok and stir until they are done and become soft;

3. Add the seasonings in and stir fully;

4. Add in the sesame oil.

Tips for Eggplant Recipes:

I have read too cook books which talks about eggplant cooking, they both advise to immerse the chopped eggplants into some salted water for a moment before dropping them into the hot oil for deep frying. It is said that this way will prevent the eggplant meat from changing in color and absorbing too much oil.

2. When buying eggplants in the market, you should pay more attention to the qualities such as soft body and sharp tail.
