Stir-fried Chinese Yam

Chinese Yam
Introduction to Chinese yam:
Chinese yam, also known as Dioscorea Opposita, is also something that we grew in our garden when I was a child. Mom prepared it in several ways, which are similar to those that used for sweet potatoes. I ate toasted, steamed and stir-fried yams as I recall.
Of course, the Chinese yam can also be eaten raw. It is sticky but tastes weird, which I like. That was for those grown by ourselves. However, now I don’t eat them raw any more. I don’t know why. Just cannot imagine that is going to happen.

Chinese Yam
Ingredients:
Chinese yam: 250 g
Green Chili Pepper: 1
Red Chili Pepper: 1
Seasonings:
Salt: 3 g
MSG: 2 g
White sugar: 3 g
Rice vinegar: 15 g
Scallion: 1 stalk
Ginger: 5 g
Vegetable Soup Stock: 1 cup
Vegetable oil: 2 tablespoons
Preparation Work:
1. Heat clean water of appropriate amount (being able to cover the yam shreds and the pepper shreds below);
2. Peel the Chinese yam, rinse and shred it;
3. Rinse the green and red peppers and remove the stem and seeds, then shred them;
4. Pour the yam and pepper shreds into the boiled water (Tips: Immerse them in the hot water as long as possible because I hasted to strain them out of the hot water and found out that the yam is not done when the dish was served. You can just leave the pepper shreds for now. They can easily be cooked and done during the cooking although the recipe reads in another way.)
5. Strain the shreds out of the hot water and cool them down in cool water, then strain them out;
6. Shred the scallion and the ginger;
7. Mix the soup stock, salt, MSG, white sugar, rice vinegar (white vinegar), scallion shreds and ginger shreds.
Cooking Steps:
1. Preheat the vegetable oil in the wok;
2. Drop the yam shreds and pepper shreds into the wok;
3. Pour the seasoning mixture that is made in Step 7 of Preparation Work into the wok;
4. Stir them fully;
5. Serve the dish in a plate.
Tips for today’s stir fried Chinese Yam:
To be honest, I don’t like what I came up with today. The main reason is that the yam shreds are not quite done yet. It failed. However, preference of tastes is different from person to person. You might love it. In addition, each cook will come up a unique taste for the same dish. Why not try it out?
