Celtuce Slices Stir-fried with Fresh Mushrooms

Stir-fried Celtuce Recipe
Introduction:
Celtuce is also known as asparagus lettuce, which is one of the lettuce. However, what we are talking about are the stems of the lettuce instead of the leaves of them. If the celtuce you buy has leaves that are fresh and nice, don’t throw them away because they have better nutritional value than the stems and can be great ingredients for another recipe to which we will introduce in the future.
To cook a great dish out of this vegetable, it is very important that the main ingredient should be very fresh and tender. This way, you will have an enhanced chewing experience later on.

Asparagus Lettuce
Ingredients:
Tender Celtuce: 250 g
Fresh shiitake mushrooms: 150 g
Seasonings:
Salt: 5 g
MSG: 3 g
Cooking wine: 15 g
Vegetable oil: 75 g
Vegetable soup stock: 50 g
Preparation Work:
1. Scrape the leaves and peel away from the cletuce stem;
2. Wash it clean and chop it into long thin slices;
3. Remove the stems from the shiitake mushrooms, wash and slice them;
Cooking Steps:
1. Pour the vegetable oil into the wok and heat it and go to Step 2 when the oil is 50% hot;
2. Drop the celtuce slices and mushroom slices into the wok, swing the wok a little bit and strain them out when they are done;
3. Pour the vegetable soup stock into the wok, add in the salt, cooking wine and MSG, and boil it;
4. Drop the celtuce and mushroom slices back into the wok when the soup is boiling;
5. Stir-fry for 3 minutes before dishing it up.
Tips:
The digestive system and the liver function can be improved if you eat celtuce often. It has some benefits for the enhancement of the resistance forĀ rheumatic diseases and gout. Cletuce is rich in potassium which helps with urination and clearing heat and extremely benefits the hypertension and heart disease sufferers. The iodine element contained in the celtuce helps with the overcome of sleeping problem due to its calming function. The rich fluorine contained takes part in the growth of bones.
However, it’s not recommended to add too much salt into the celtuce dishes because celtuce doesn’t like salt. Only with little salt, it will taste better.
Note: Some substance contained in the celtuce can stimulate the optic nerve. So those people with eye diseases or nyctalopia should limit the intake of it.
