Rice Porridge with Poato and Pumpkin Dices
Introduction:
In one of the previous posts, we introduced about a soup recipe cooked with diced potato and pumpkin. And in another post, a potato rice porridge recipe was presented. What’s more, I have read about a recipe for pumpkin rice porridge. So I thought why not prepare a rice porridge with potato and pumpkin.
That was the origin of today’s rice porridge recipe. And Halloween is lingering around, so it’s pumpkin season. Why not cook some pumpkin rice porridge and other pumpkin recipes? You will see some Chinese veggie recipes for pumpkins on this website soon.
Ingredients:
Polished round-grained rice: 50 g
Potato: 1 medium sized
Pumpkin: 100 g
Seasonings:
White Sugar: 10 g (or 3 g of salt, depending on your preference.)
Water: 1000 ml
Preparation Work:
1. Rinse the rice clean with water and immerse it in cool water for half an hour, and then strain the rice out of the water;
2. Peel and wash the potato and pumpkin before cutting them into dices;
Cooking Steps:
1. Pour the 1000 ml water into the pot and drop the immersed rice in;
2. Boil the pot with high heat;
3. Add the potato and pumpkin dices into the boiling pot;
4. Turn to low heat and boil what is in the pot into porridge (which is sticky);
5. Season the porridge with white sugar (or salt).
6. It’s ready for serving.
Cooking Tips:
1. If the pumpkin dices are not boiled into porridge (which means they are still dices), that’s okay because that would be consistent with the potato dices which are impossible to be melted into the porridge. And that would save some gas or electricity. Lol. Of course, that depends on what you like better.
2. You can make it either salty or sweet. When it comes to potato, I prefer salty. When it comes to pumpkin, I prefer sweet. So I am really stuck as far as this rice porridge recipe is concerned. You can do whatever you like.

In the “Cooking Step” section at which point do you add in the pumpkin?

Thanks for your comment. The pumpkin dices are supposed to be added in together with the potato dices. I have missed the pumpkin in the cooking steps. Sorry.
