Hot and Spicy Taro Strips

Introduction:

The hot and spicy taro strips recipe that I am going to share with you today is using the deep-frying technique that I have discovered. (You will benefit from it without noticing it.)

Although I didn’t consider it a complete success, Rachel liked it very much because it looks alright (Some red chili pepper can be added to enhance its color) and, what’s more important, tastes good. I think you will like it.

Ingredients:

Taro: 400 g (or one big sized)

Seasonings:

Vegetable oil: 4 tablespoons

Salt: 1/2 teaspoon

MSG: depending on your own preference

Sichuan pepper powder: 1-2 g

Paprika: 1-2 g

Minced scallion: 1 teaspoon

Minced garlic: 1/2 teaspoon

Preparation Work:

1. Peel the taro, wash it, put it on a plate, and put the plate into a steamer;

2. When the taro is steamed and done, take it out of the steamer;

3. Cut the steamed taro into strips (The cross section should be a square with equal sides of 1 cm) when it gets cool;

Cooking Steps:

1. Pour the vegetable oil in the wok and preheat it until the oil gets 50% hot;

2. Turn to low heat;

3. Fry the taro slices in the oil (Fry one slice at a time, which is the only way to save on oil and get the frying results that you want.);

4. Leave some oil in the wok after the deep-frying process is done, and turn on the high heat;

5. Drop the minced scallion and garlic into the wok;

6. Spray the paprika in and stir fry a little bit when the wok is full of scallion and garlic aroma;

7. Add the taro strips in and stir fry what’s been in the wok until they mix with each other fully;

8. Add salt, MSG and Sichuan pepper powder in and blend them fully.

Cooking Tips:

1. In the original recipe, the taro was supposed to be sliced instead of shredded. However, during my cooking, I found it difficult to keep the taro slices intact during the cooking process.

And it’s difficult to stir fry while using big slices. So I thought it might be some kind of typo in the cookbook. LOL.

2. It looks not very good from the picture. So I recommend you to add some colors with red chili pepper slices or some caraway.
