Stir-fried Dried Bean Curd Sticks with Green Chili Peppers

Introduction:

The other day, I shared a soup cooked of dried bean curd sticks. This ingredient is very special. They are weird to the teeth when chewing on them in a good way.

They are in a strange shape that I have been wondering about. I cannot come up with a good object that I can compare this tofu product to. How could that be important when my teeth and tongue enjoy them?

Ingredients:

Dried Bean Curd Sticks: 250 g

Green chili peppers: 250 g

Shiitake mushrooms: 100 g (Dried or fresh)

Seasonings:

Scallion: 1 teaspoon (chopped coarsely)

Ginger slices: 3

Salt: 1/2 teaspoon

Soy sauce: 1 teaspoon

Cooking wine: 1 teaspoon

MSG: 1/2 teaspoon

Peanut oil: 2 tablespoons

Sesame oil: 1/4 teaspoon

Preparation Work:

1. Immerse the dried beancurd sticks in lukewarm water until they are softened; Then take them out of the water and chop them into pieces of 3 cm long;

2. Wash the shiitake mushrooms clean with water and slice them;

3. Rinse the green chili peppers clean and dice them;

Cooking Steps:

1. Preheat the peanut oil in the wok with high heat;

2. Drop the chopped scallion and ginger slices in and swing the wok a little bit to flavor it;

3. Add the dried bean curd stick pieces, mushroom slices and green chili pepper dices in, and stir fry them a little bit;

4. Add in salt, soy sauce, cooking wine, MSG and some vegetable soup stock;

5. Stir-fry what’s in the wok until the color changes;

6. Spray some drops of sesame oil into the wok before dishing out.

Cooking Tips:

1. Although I used this name, i.e. dried bean curd sticks, for this ingredient that is a tofu product, “dried bean milk cream in tight rolls” should be more accurate in expressing what it is. If you don’t know what it is, you can ask the waiter in the market.

2. As far as the shiitake mushrooms are concerned, I would rather remove the whole stem from the umbrella-shaped top. This is because the mushroom stems are too fibrous and hard for my teeth to chew on. However, if they are softened correctly, they can be very delicious.
