Twice Cooked Tofu Recipe

Double Cooked Tofu Recipe
Introduction:
Double cooked dishes are very characterized in Sichuan food. The most popular one is “Double Cooked Pork” which you might have heard of.
I had no idea that the double cooking method could be used in the vegetarian cooking at all before I came across this recipe below, although I had eaten similar dishes in the restaurant.
Ingredients:
Tofu: 200 g
Green chili peppers: 50 g
Seasonings:
Vegetable oil: 20 g
Scallion pieces: 10 g (coarsely chopped);
Ginger slices: 5 g
Garlic slices: 5 g
Salt: 4 g
MSG: 2 g
Dou Ban Jiang: 15 g
Sesame oil: 2 g
Soy sauce: 10 g
Cooking wine: 7 g
White sugar: 8 g
Preparation Work:
1. Cut the tofu into rectangular pieces (around 1 cm thick);
2. Slide the tofu pieces into preheated oil, and strain them out when they turn to golden in color;
3. Wash the green chili peppers clean, remove the stems and seeds from them, and cut them into pieces;
Cooking Tips:
1. Pour the vegetable oil into the wok, and preheat it;
2. Add in the scallion pieces, ginger slices and dou ban jiang and stir fry them until the wok becomes fragrant;
3. Add the cooking wine, white sugar and soy sauce in;
4. Pour the fried tofu back into the wok;
5. Add the green chili pepper in;
6. Stir fry evenly;
7. Stir the salt, MSG and sesame oil into it before dishing out.
Cooking Tips:
To be honest, I have tried this recipe by myself twice. At the first time, I fail in properly fry the tofu pieces which didn’t remain intact.
Therefore, I substituted the first frying step with prepared one that I bought in the market. Maybe later on, I can come up with the trick that I can share with you.
However, I still have a tip to share with my readers, i.e. don’t use tofu that is too tender.
