Smoked Tofu Stir-fried with Green Garlic
Introduction:
I came up with this smoked tofu and green garlic recipe after the successful experience that I had with the cabbage and smoked bean curd recipe.
This recipe was inspired by Rachel who once enjoyed this dish very much. So I just made a little tweak to the previous recipe. It turned out to be very cool.
So if you make some adjustment by switching certain ingredients or seasonings in any of the recipes listed on this website and come up with a recipe of your own. Then you will find out what cooking is all about.
You can even add some local element to these recipes. For example, if you are living in the United States, you might want to add some western elements to them. Feel free to do that.
Ingredients:
Green garlic: 3 sticks (or 100 g)
Youxian Smoked tofu: 5 pieces (0r 100 g)
Seasonings:
Vegetable oil: 1 tablespoon
Minced ginger: 1 teaspoon
Coarsely chopped scallion: 1 tablespoon
Salt: 1/2 teaspoon
Soy sauce: 1 teaspoon
Cooking wine: 1 teaspoon
White sugar: 1/2 teaspoon
Preparation Work:
1. Get the minced ginger and chopped scallion ready in advance;
2. Cut the Youxian smoked bean curd into pieces that are 5 mm thick on average;
3. Remove the roots and dried leaves from the green garlic sticks, rinse them clean and chop them with the knife being slightly slant (with a certain angle between the knife blade and the garlic sticks);
Cooking Steps:
1. Wash the wok clean and put it onto high heat;
2. Pour the vegetable oil into the wok when it gets dried;
3. Make the wok fragrant with the garlic mince and the chopped scallion when the oil is 70% hot;
4. Pour the green garlic pieces into the wok and stir fry for half a minute;
5. Drop the sliced smoked tofu into the wok and mix them with the garlic quickly;
6. Add in cooking wine, salt, soy sauce, white sugar in order and stir quickly;
7. Season it with MSG, if you like, before dishing it out.
Cooking Tips:
Don’t fry the green garlic too long before adding the smoked tofu slices in. After all, there is still a long way to go after that.
Spray some water along the wall of the wok if you find that the wok is relatively dry. This will prevent the ingredients from being burned.
