Peanuts and Chinese Yam Rice Porridge

Rice Porridge with Peanuts and Chinese Yam
Introduction:
The weather in Shenzhen is turning warm again. The temperature difference between the day and the night is big. It’s difficult to decide what to wear indoors and outdoors.
So I decided to absorb some warmth from the earth. I chose the peanuts, which is one nut that grows in the soil, and the Chinese yam, a vegetable that grows in the earth like potatoes.
Ingredients:
Polished round-grained rice: 100 g
Chinese yam: 50 g
Peanut kernels: 50 g
Seasonings:
Rock sugar: 10 g
Cool water: 1000 ml
Preparation Work:
1. Wash the peanut kernels and the rice clean with water, immerse them in clean water separately and strain them out when they are soaked through;
2. Wash the Chinese yam clean, peel and dice it;
Cooking Steps:
1. Pour the 1000 ml water into a wok or a stockpot, and add the immersed peanuts and rice in at the same time;
2. Put the wok or stockpot on high heat and boil what’s in it;
3. Add the Chinese yam dices into the boiling water;
4. Turn to low heat and simmer it until the clear water becomes sticky porridge;
5. Add in the rock sugar and boil for another minute before serving.
Cooking Tips:
Peanuts are firm in nature. It is not easy to soften them by cooking. So the immersing in the preparation process is important. I suggest 2 hours at least.
