Introduction:

Before we come to the specific recipe for today’s recipe – shepherd’s purse stir fried with bamboo shoots, I have a confession to make.

In the supermarket where I bought this ingredient, this vegetable is called shepherd’s-purse, which is corresponding with the cookbook where the original recipe is, which I knew from the picture featured in it.

However, when I tried to look for pictures online with the name, I found the pictures search results were totally another thing.

I will use this name in today’s recipe though. If you know which is correct, please leave a comment at the end of this post. Thanks.

Ingredients:

Shepherd’s-purse: 300 g

Bamboo shoots: 50 g

Seasonings:

Ginger: 1 slice

Salt: 1/2 teaspoon

MSG: 1/4 teaspoon

Sesame oil: 1/4 teaspoon

Vegetable oil: 1 tablespoon

Preparation Work:

1. Put the wok with 1000 ml water on high heat;

2. Rinse the shepherd’s purse clean with water and chop them into big pieces;

3. Peel the bamboo shoots, rinse and slice them;

4. Cut the ginger slice into shreds;

5. Immerse the prepared ingredients into the boiling water briefly when the water begins to boil;

6. Take them out from the hot water, transfer them into cool water, and take them out after one minute or two;

Cooking Steps:

1. Preheat the vegetable oil on high heat until it gets 70% hot;

2. Drop the shredded ginger into the oil to make the wok fragrant with the ginger smell; (This process takes a few seconds);

3. Drop the ingredients that are strained from the cool water into the wok and stir fry;

4. Add in the salt and MSG and stir a little bit;

5. Spray some water with a spoon along the edge of the wok during the stir-frying process;

6. Drop some sesame oil onto the vegetables and blend them with each other fully when the ingredients is done;

7. Dish out and serve.

Cooking Tips:

The scalding process (immersing into hot water) can be long until the ingredients begin to get softened. This will shorten the stir-fry process. I highly recommend it.

The stir-frying process will only preserve the freshness of the vegetables with high heat or full flame. It’s a short period. That’s what stir-frying is about.
