Cucumber slices and Dried Bean Curd Sticks
Introduction:
I fell in love with the bean curd sticks when I cooked another recipe with it. You can see this recipe here. They tastes good, more like vegetarian meat. In today’s recipe, the accompanying vegetable is cucumber slice. Without any ado, let’s get to the recipe itself right away.
Ingredients:
Dried bean curd sticks: 200 g
Fresh cucumber: 200 g
Seasonings:
Starch: 1 tablespoon (melt in water)
Salt: 3 g
MSG: 1 g
Soy sauce: 15 g
Vinegar: 5 g
Scallion: 5 g
Ginger: 1 slice
Garlic: 1 clove
Vegetable soup stock: 2 tablespoons
Vegetable oil: 50 g
Preparation Work:
1. Immerse the dried bean curd sticks into clean water for a hour; (Which means that you should do this job one hour before you start preparing for the cooking.)
2. Cut the ginger slice into shreds;
3. Chop the scallion coarsely;
4. Slice the garlic clove;
5. Cut the cucumber into slices that are around 2 millimeter thick;
6. Strain the bean curd sticks out of the water and cut them into pieces that are 4 centimeter long;
7. Take a big bowl and mix the bean curd stick pieces with the starch melted with water;
Cooking Steps:
1. Pour the vegetable oil into the wok and put the wok on high heat or full flame;
2. Turn to low heat or flame when the oil gets 50% hot;
3. Drop the bean curd stick pieces into the wok and separate them with a turner;
4. Pour what’s in the wok into a sieve after one minute;
5. Pour some of the oil used in the previous step back into the wok and put the wok back on high heat or full flame;
6. Drop the chopped scallion, ginger shreds and garlic slices into the wok, and go the next step when their flavors are smelled;
7. Add the cucumber slices into the wok and stir-fry them;
8. When the sliced cucumber becomes 80% done, add the fried bean curd sticks into the wok;
9. Add some soup stock into the wok together with seasonings including salt, MSG, soy sauce and vinegar;
10. Thicken the liquid with melted starch when what’s in the wok begins to boil;
11. Dish out and get ready for serving.
Cooking Tips:
Pay attention to the period when the cucumber slices are added to the wok and stir-fried. Cucumber slice is easy to get soft. So don’t prolong the duration too much. Otherwise, the color of the cucumber will get dark.
