Vegetarian Chicken

Introduction:

Most of the Chinese vegetarian meat is made of bean curd. This is because of the special properties of Tofu or bean curd. It can be made firm (which is necessary to imitate the quality of meat) and soft. It can be dried, steamed or smoked. It can even be made into various shapes including pieces, thin slices and blocks, not to mention the meat texture.

The vegetarian chicken that we are going to use is made with the steaming method. The one that I am most familiar with is the one that I am going to use. As I recall, this is one of the most popular dishes among my classmates at college.

Ingredients:

Vegetarian chicken: 250 g

Peanut kernels: 50 g

Seasonings:

MSG: 1 g

White sugar: 4 g

Salt: 3 g

Soy sauce: 10 g

Scallion: 1 thin stick

Ginger: 1 slice

Starch: 1 teaspoon

Peanut oil: 3 tablespoon

Vinegar: 1 teaspoon

Preparation Work:

1. Chop the scallion into pieces;

2. Cut the ginger slice into smaller pieces;

3. Dice the vegetarian chicken (any size you prefer. I would make them corresponding to the peanut kernels.);

4. Fry the peanuts: Pour one tablespoon of peanut oil into the wok and add the peanuts in, put the wok on medium heat or flame, and start to stir with a spoon or turner, turn the heat off when the peanuts’ color becomes very fresh and bright. Put the peanuts on a plate to cool down.

Cooking Steps:

1. Pour 1 tablespoon of peanut oil into the wok and put the wok on high heat;

2. Add in the vegetarian chicken dices and fried peanuts when the oil gets hot;

3. Season with soy sauce, MSG, ginger pieces, scallion pieces, vinegar, white sugar, salt and 1/4 cup of water, and stir fully;

4. Thicken the soup with melt starch when the ingredients are done;

5. Dish out immediately.

Cooking Tips:

1. Don’t fry the peanuts for too long. I learned a lesson when I did it. The peanuts got dark in color. I had got to rush down to the supermarket again for them.

2. When the peanuts are finished frying, spray some white wine onto them. Blend them fully. When they cool down, spray some salt on them then. This way, the peanuts will stay crispy and will not get soggy even in days.
