Niblets Stir Fried with Sweet Potato Dices
Introduction:
Today’s recipe is going to deal with some corn stuff which I like. Before I enjoyed my first dish cooked with corn, I didn’t realize that corn can be used as a vegetable because it had always been a staple food for me in my whole life.
With two of them the corn and the sweet potato dices, this recipe is just a perfect combination of the staple foods being used as vegetables. Anyway, let’s get to the recipe now.
Ingredients:
Sweet potato: 150 g
Corn niblets: 100 g
Green bell pepper: one half
Dried Barbary Wolfberries: 10 grains
Seasonings:
Salt: 3 g
Chicken bouillon: 2 g
Pepper powder: 1 g
Vegetable soup stock: 1/4 cup
Vegetable oil: 50 g
Starch: 1 teaspoon
Preparation Work:
1. Wash the sweet potato or potatoes clean and peel it or them, and dice it or them into the size that is similar to that of the corn niblets;
2. Rinse the green bell pepper, remove the seeds and strings, and cut it into small dices;
3. Rinse the corn niblets clean and scald them in hot water;
3. Immerse the dried wolfberries into lukewarm water until they get softened.
Cooking Steps:
1. Pour the vegetable oil into the wok;
2. Drop the sweet potato dices into the oil when it gets 70% hot, and fry until their skin gets hard, and strain them out of the oil;
3. Leave some oil back in the wok (about 1 tablespoon of it), drop the green bell pepper dices and corn niblets into the wok and stir fry briefly;
4. Drop in the sweet potato dices and stir fry briefly;
5. Add in the soup stock, salt, chick bouillon, pepper powder and stir fully until the sweet potato dices and the corn are done;
6. Drop the wolfberries in and stir fully;
7. Thicken it with the melted starch before serving.
