Water Spinach with Chili Pepper Slices and Fermented Bean Curd

Winter Spinach
Introduction:
Today, I am going to introduce another quick fry recipe that is very health and delicious. I love water spinach, especially the fresh one. In Chinese, it is called “Empty-Hearted Vegetable” because the central part of the vegetable is indeed empty, which I totally agree on.
Ingredients:
Water spinach: 250 g
Red fermented bean curd: 1 piece
Red chili pepper: 1
Green chili pepper: 1
Seasonings:
Scallion: 1 tablespoon (chopped)
Minced ginger: 1/2 teaspoon
Salt: 1/2 teaspoon
MSG: 1/3 teaspoon
Red fermented bean curd juice: 1/2 tablespoon
White sugar: 1 teaspoon
Vegetable oil: 1 tablespoon
Preparation Work:
1. Get the scallion chopped coarsely and the ginger minced;
2. Take a small bowl, put the fermented bean curd, bean curd juice, salt, MSG, white sugar, scallion and ginger mince in it, and blend them together fully into seasoning juice;
3. Rinse the water spinach clean and cut it into pieces of 5 cm long;
4. Wash the chili peppers clean, remove the seeds and stems, and cut them into shreds;
Cooking Steps:
1. Preheat the vegetable oil in the wok on high heat or full flame;
2. Drop the water spinach pieces and shredded chili peppers into the wok and stir fry with full flame;
3. Pour the seasoning juice into the wok when the water spinach begins to get soft.
Cooking Tips:
1. White sugar added to the water spinach in the wok while stir frying it will make the leaves look green and tender.
2. I would rather not cut them with a knife after washing the vegetable clean. I would like to pick the dried leaves and rip the stems into pieces with my hands before washing it. This way, when I am doing it, I can test the tenderness of the parts of stem and remove the firm ones.
