Stir Fried Zucchini Slices
Introduction:
Another stir fried Zucchini recipe was introduced before on this website. Since Zucchini is a vegetable that is extremely easy to cook, I am introducing another recipe for the stir fried slices.
Everything is the same except for the cutting and seasonings. Sometimes, there is nothing wrong with trying different things to a recipe.
Ingredients:
Fresh zucchini: 2 medium sized ones
Seasonings:
Salt: 1/2 teaspoon
Wolfberries: 10 grains
Dried small shrimps: 1 tablespoon (If they are against your vegetarian belief, then remove them from this recipe.)
Garlic clove: 1
Ginger slices: 6 slices
Vegetable oil: 2 tablespoon
Soy sauce: 1/2 tablespoon
Vinegar: 1/2 teaspoon
Starch: 1 teaspoon
Preparation Work:
1. Rinse the zucchini clean, cut the both ends away and cut it into slices that are 2 millimeters thick;
2. Slice the ginger and the garlic clove;
Cooking Steps:
1. Preheat the vegetable oil in the wok on high heat and full flame;
2. Drop the ginger slices and garlic clove slices into the wok when the oil gets 60% hot;
3. Add the zucchini slices into the wok and stir-fry;
4. Add in the salt, vinegar, soy sauce and the dried small shrimps into the wok when the zucchini slices begin to soften, and stir fully;
5. Melt the starch with appropriate amount of water and add it into the wok to thicken the soup.
Cooking Tips:
1. It tends to get very soft when the zucchini is cooked. So I would turn off the heat before the sliced zucchini is totally done;
2. Starch is needed because extra soup will get out of it when it is heated.
