Radish Soup
Introduction:
Radish is a very health vegetable which has been cherished by the Chinese people for hundreds of years. In China, this special vegetable has been looked on as second to Ginseng which is a herb that nurtures the human body for patients and healthy people.
The rich content of Vitamin C and Zinc, white radish can improve our immune system and our resistance for diseases.
The mustard oil contained in white radish can also increase our gastrointestinal motility and help with our digestion.
It also contains amylase which help with the discomposition of starch and fats, making them easier to be absorbed by the human body.
The lignin contained improves the activity of the macrophage which swallows cancer cells. So eating radish often can prevent cancers.
Ingredients:
White Radish: 1 medium-sized one
Caraway leaves: 20 g
Seasonings:
Salt: 2 g
Vegetable soup stock: 500 g
Pepper powder: 5 g
Star Aniseed: 2
MSG: 1 g
Preparation Work:
1. Wash the radish clean and peel it, then cut it into slices;
2. Immerse the radish slices into hot water and strain them out when they are softened;
3. Spray dry starch on the surface of the slices, put them into a steamer and steam them until they are done;
4. Put the steamed radish slices into cool water;
Cooking Steps:
1. Pour the vegetable soup stock into the wok, add in some salt, and boil it on high heat;
2. Strain the slices of radish out of cool water and put them into the boiling wok;
3. Fish the slices out and put them in the soup bowl after cooking for one to two minutes;
4. Continue to heat the wok until the soup begins to boil;
5. Add in pepper powder, star aniseeds and MSG;
6. Skim the floating bubbles at the surface;
7. Pour the finished soup onto the radish slices in the bowl;
8. Spray the caraway leaves onto them before serving.
Cooking Tips:
1. The star aniseed is strong in flavor which covered the flavor of the radish up. So I recommend that you can take them away from the recipe. It will still taste great.
