Winter Melon Soup
Introduction:
Winter melon is the name that I like for the also named white gourd. Of course, that doesn’t mean that it can only be enjoyed in the Winter. But a winter dinner surely can be warmed up by a winter melon soup.
Ingredients:
Winter melon: 200 g
Mung bean: 50 g
Seasonings:
Scallion leaf: 20 leaves
Ginger: 10 g
Salt: 1 teaspoon
Vegetable soup stock: 4 cups
Preparation Work:
1. Wash the ginger clean and break it by patting it with the side of the knife;
2. Rinse the scallion leaves clean, and weave them into knots;
3. Rinse the mung beans clean with cool water, and remove the bean skins that are floating on the water surface;
4. Scrape the skin of the winter melon off, remove the seeds and pulp, then wash it clean and chop it into blocks;
Cooking Steps:
1. Take a crock, wash it clean and put it on full flame;
2. Pour the vegetable soup stock into the crock and wait until it boils;
3. Skim the floating bubbles on the surface;
4. Add the broken ginger, scallion leaf knots and green beans into the crock;
5. Add in the winter melon blocks when the mung beans are softened and done;
6. Add in salt and MSG in after the winter melon is done.
7. Ready for serving.
Cooking Tips:
1. The combination of mung bean and winter melon has many benefits to our body such as facilitate urination, relieve swelling, resolve lipid and shape your body. That is to say, this recipe is good for those that want to lose fat.
2. This is also a recipe that will clear away summer heat. So just include it into your diets in every season.
