Scallion Mashed Potatoes Recipe

Introduction:

I have always regard mashed potatoes as a west style dish. However, with the stir fry method included, we can look on it as a combination of the eastern and the western styles. Don’t you think.

But the most important thing about a course is the flavor. No matter what style it is cooked in, it is good as long as it is delicious.

Deng Xiaoping, one of the Chinese top leaders, said once: Black or white, a cat is a good cat as long as it catches mice. I totally agree because we are living in societies that evaluate us by results. ‘Nuff said. Let’s get to the mashed potatoes recipe itself.

Ingredients:
Potatoes: 300 g
Scallion: 1 stalk

Seasonings:
Peanut oil: 30 g
Salt: 2 teaspoon
MSG: 1/3 teaspoon

Preparation Work:
1. Wash the potatoes clean, put them into a steamer, place a steamer on a pot with water, and put the pot on high heat or full flame;
2. When the potatoes are softened and done due to the steaming, remove the skin and mash them;
3. Mix the salt into the mashed potato;
4. Chop the scallion finely.

Cooking Steps:
1. Pour the peanut oil into the wok, and put the wok on high heat or full flame;
2. When the oil is hot, add in the chopped scallion, and swing the wok a little bit holding the handle so that all of the scallion is flooded by the peanut oil;
3. Add in the mashed potatoes;
4. Add the MSG in and stir to blend it with the mashed potato fully before dishing out and serving.

Cooking Tips:

When you are stir frying the steamed potato that has been mashed, you should turn the heat down a little bit in order to prevent the potatoes from been burnt.

Salts can be added a little bit more than usual because I found that the salt seemed to be swallowed by the mashed potato. :P
