Stir Fried Sweet Potato Shreds

Introduction:

I have to confess that this is the first time that I cook a stir fry recipe for sweet potatoes. That is because I never even thought about sweet potato being cooked with this method. My mother used to not cook any fruit-characterized vegetables or vegetables that taste sweet.

But the cookbook inspired me and the result was fantastic. My family loved what I came up with. You definitely want to try this out yourself. I believe you might also experience a subversion of old belief, too. :P

Ingredients:

Sweet potatoes: 250 g

Seasonings:

Salt: 4 g

MSG: 2 g

White sugar: 30 g

Spicy Dou Ban Jiang: 15 g

Peanut oil: 1 tablespoon

Preparation Work:

1. Wash the sweet potato clean with water, scrape the skin off, cut it into fine shreds that are around 3 centimeters long, and immerse the shreds into cool water;

2. Chop the Dou Ban Jiang finely;

Cooking Steps:

1. Wash the wok clean and put it onto high heat or full flame;

2. Pour the peanut oil into the wok when it gets dry with heat;

3. When the oil gets hot, add in the chopped dou ban jiang (powder) and let it fried until the smell is set off;

4. Strain the sweet potato shreds from the water, put them into the wok and stir fry quickly;

5. Add in salt and fully stir;

6. Put the lid on the wok and wait for 2 minutes;

7. Add the white sugar in and stir quickly;

8. Add in the MSG and blend them briefly before dishing out and serving.

Cooking Tips:

1. You don’t want to stir fry the shreds for a long time. They will become very soft when cooked that way. So the controlling of the flame or heating is very important. However, it doesn’t matter much because sweet potato is a fruit, too. Remember? Do your experiment.

2. You might also want to add some sesame oil just prior to dishing out. This will add some freshness to the color.
