Stir Fried Soybean Sprouts with Deep Fried Tofu
Introductions:
The recipe that I am going to present today is stir fried soybean sprouts and deep fried tofu. You may see a little overload of soybean here because both of the ingredients are bean products. However, this will provide enough protein to your body.
Ingredients:
Soybean sprouts: 250 g
Deep fried tofu: 150 g
Seasonings:
Salt: 2 g
Soy sauce: 10 g
MSG: 0.5 g
Sichuan pepper corns: 1 g
Vegetable oil: 20 g
Preparation Work:
1. Wash the soybean sprouts clean and remove the roots;
2. Cut the deep fried bean curd if you like. This way, it becomes easier for them to be cooked through. But in this recipe, I would just use them the way they are supplied.
Cooking Steps:
1. Wash the wok clean and put it on high heat and full flame;
2. Pour the vegetable oil into the wok when the wok becomes dried;
3. Drop the Sichuan pepper into the oil when it gets hot, and swing the wok a little;
4. Turn off the heat or flame;
5. Take the pepper corns out and throw them away;
6. Turn on the heat and full flame;
7. Pour the soybean sprouts into the wok when the oil gets hot again, and stir fry them until they are done;
8. Add in the deep fried tofu, salt, soy sauce and clean water, and stir briefly;
9. Put the lid onto the wok and heat for 5 minutes until the soup is thickened;
10. Spray MSG onto the dish and stir until they are fully mixed before dishing out and serving.
Cooking Tips:
1. Water is needed in order to soften the deep fried tofu, as I explained above in the preparation work section;
2. You can leave the roots of the soybean sprouts on if you want. But it would taste fibrous with them on. It would takes dozens of minutes to remove them. Choice is yours though.
