Red Mung Beans and Lotus Root Rice Porridge Recipe

Introduction:

I love lotus roots not only because they are delicious, natural and adding to our menu, but also because of their personality which is applauded by an essay included in our high school textbook. Growing in the mud, they are still clean all over when they are rooted out for meals.

Today, we are going to make a porridge out of them. Later, we will introduce more recipes for lotus roots on this website. After all, porridge is not the only lotus root recipe available. They can be cooked in many methods.

Ingredients:

Lotus root: 90 g

Red mung beans: 40 g

Lotus seeds: 20 g

Polished Glutinous rice: 20 g

Seasonings:

Fructose: 15 g

Water: 1500 ml

Steps:

Preparation working:

1. Wash the polished glutinous rice and red mung beans, and immerse them into water separately for 2 to 3 hours in advance;

2. Wash the lotus seeds clean and immerse them into water for some time until they are softened;

3. Wash the lotus root clean, and slice it.

Cooking:

1. Pour 1500 ml water into the pot;

2. Boil the water;

3. While the water is boiling, put the read mung beans, polished glutinous rice, lotus seeds, and lotus root slices into the pot;

4. When the mixture boils again, turn to low heat and simmer it for 2 hours;

5. After the porridge gets sticky, add the fructose in and fully stir it.

6. It’s ready for serving.

Cooking Tips:

1. Red mung beans can facilitate urination, relieve the effects of alcohol and detoxify the body.

2. This porridge recipe takes pretty long to prepare and cook. However, I would just observe the changing status of it and decide what to do next. It depends on your own preference sometimes. For example, the low heat simmering is intended to turn the boiled mixture of rice and water into sticky porridge. It actually is done, which means you can eat them now. So if you like the watery porridge more, then it would be meaningless to simmer for 2 hours.
